ABOUT

The old flour mill at the mouth of the Cataract Gorge has a long connection with Launceston. First built in the 1840’s, it was also the principal supplier of fresh water to Launceston until 1857. Milling flour and oats continued well into the next century until 1943 when there was a fire in the roof. The building served as a storage facility for a local grainery un was also the principal supplier of fresh water to Launceston until 1857 until 1973, after which it had a new lease of life as the Ritchies Mill Art Centre.  The cottage part of the building (now suite 7) was transformed into a cafe by one of Stillwater’s original founders evolving with the dining scene and the original café expanding to become one of Tasmania’s leading restaurants. In 2019 we added the Stillwater SEVEN to our offerings, and since then visitors to Launceston have been able to not only experience fine dinning, but also stay with us in this beautiful part of the City's heritage.

Our philosophy is to provide a quintessential Tasmanian experience: food and wine matched with personalised service that is unobtrusively professional. We work closely with every one of our local  suppliers to provide our guests with only the freshest and most wholesome vegetables, meats, herbs, fruits and seafoods; the finest wine, spirits, beer and non-alcoholic beverages; and the most exquisite condiments we can locally source.
